Rhubarb and Apple Muffins
With Billies Sugared Spice

Servings: 12 muffins
Stewed apple with a swirl of cooked rhubarb and Billies Sugared Spice. Makes a great breakfast treat or dessert, especially served with custard.
Ingredients:
- 2 cups Self Raising flour
 - 100g Melted Butter
 - 2 Heaped tsp Billies Sugared Spice
 - 1 cup Milk or Yogurt or 1/2 and 1/2
 - 1 egg
 - 1 cup Stewed Apples
 - 1/2 cup Stewed Rhubarb
 
Instructions:
- Mix sugar, flour and Billies Sugared Spice,then mix in stewed apple.
 - Combine egg, butter and milk, then add to dry ingredients.
 - Fold carefully and swirl through stewed rhubarb.
 - Scoop in to greased muffin tins
 - Bake at 180C for about 12-15mins.
 - Dust with icing sugar and serve with fresh cream.
