Rhubarb and Apple Muffins

With Billies Sugared Spice

Stewed apple with a swirl of cooked rhubarb and Billies Sugared Spice. Makes a great breakfast treat or dessert, especially served with custard.



  • cups Self Raising flour
  • 100g Melted Butter
  • Heaped tsp Billies Sugared Spice
  • cup Milk or Yogurt or 1/2 and 1/2
  • egg
  • cup Stewed Apples
  • 1/2 cup Stewed Rhubarb 


  • Mix sugar, flour and Billies Sugared Spice,then mix in stewed apple.
  • Combine egg, butter and milk, then add to dry ingredients.
  • Fold carefully and swirl through stewed rhubarb.
  • Scoop in to greased muffin tins
  • Bake at 180C for about 12-15mins.
  • Dust with icing sugar and serve with fresh cream.
