Billies Masala is a family favourite, and these meatballs are such a quick and easy family dinner.
Top with a few cashews and serve with stir-fried vegetables, cauliflower rice, rice or naan.
For extra creaminess add ½ cup raw cashews to the sauce before blending.
MEATBALLS
500g beef or lamb mince
6 pork sausages (skin removed)
2 tsp Billies Masala
SAUCE
1 tin coconut milk
1 tin of plain tomatoes in puree
1 tsp Billies Masala
2 tsp Greggs Red Curry Paste (or your preferred brand)
2 spring onions
1-2 Tbs honey
1 roasted red capsicum
INSTRUCTIONS
- Place all ingredients for the meatballs into a large bowl and combine.
- Portion the meatballs and roll with wet hands. Add to a large, hot fry pan and brown.
- Place all ingredients for the sauce into a blender and mix until smooth.
- Pour sauce over the meatballs and simmer until meat is cooked through (about 15 minutes). Serve with rice or yummy Cauliflower rice.
CAULIFLOWER RICE
Break up a cauliflower, trim the stalks and place everything in a blender.
Fill the blender with cold water and blend for about 3 sec. Strain off water.
Stir fry with some butter and a sprinkle of Billies Seasoned Garlic or Seasoned Garlic Chilli.
