Banana and Almond Muffins

With Billies Sugared Spice

Servings: 12 muffins

 

We made these in our Thermomix (so the measurements are in grams) but you can easily mix them by hand or even try using a blender. They are dairy free and can be gluten free too if you substitute the flour. 

Ingredients:

  • 60g almond meal 
  • 170g ripe banana, broken into pieces
  • 2 eggs 
  • 70g orange juice
  • 80 g maple syrup
  • 120g olive oil 
  • 190g self-raising flour 
  • ¼ tsp baking powder 
  • 1 tsp Billies Sugared Spice

Instructions:

  • Preheat the oven to 160°C. Line a 12-hole muffin tray with paper cases and set aside.
  • Place almonds into mixing bowl.
  • Mash banana and add to bowl.
  • Add eggs, juice, syrup and oil and mix.
  • Add flour, baking powder and Sugared Spice and mix until combined.
  • Scoop mixture into the muffin tray, bake for 20-25 minutes (160°C). Allow to cool in tin for 5 minutes, then transfer onto a wire rack to cool completely.

Notes:

  • Feel free to substitute the OJ for almond milk and the maple syrup for brown sugar.
