Servings: 12 muffins
We made these in our Thermomix (so the measurements are in grams) but you can easily mix them by hand or even try using a blender. They are dairy free and can be gluten free too if you substitute the flour.
Ingredients:
- 60g almond meal
 - 170g ripe banana, broken into pieces
 - 2 eggs
 - 70g orange juice
 - 80 g maple syrup
 - 120g olive oil
 - 190g self-raising flour
 - ¼ tsp baking powder
 - 1 tsp Billies Sugared Spice

Instructions:
- Preheat the oven to 160°C. Line a 12-hole muffin tray with paper cases and set aside.
 - Place almonds into mixing bowl.
 - Mash banana and add to bowl.
 - Add eggs, juice, syrup and oil and mix.
 - Add flour, baking powder and Sugared Spice and mix until combined.
 - Scoop mixture into the muffin tray, bake for 20-25 minutes (160°C). Allow to cool in tin for 5 minutes, then transfer onto a wire rack to cool completely.

Notes:
- Feel free to substitute the OJ for almond milk and the maple syrup for brown sugar.
